Coconut Halibut
Ingredients
1lb Halibut
2 Eggs
1cup Panko Bread Crumbs
1/2 cup unsweetened coconut flakes
1 pint Fry Oil
Salt & Pepper
Instructions
Skin Halibut Fillet
Cut Halibut into bite size pieces, pat dry with paper towel
Combine panko and coconut in large mixing bowl
Crack eggs into seperate bowl and blend yolk and whites together
Using chopsticks or a fork drop chunks of fish into egg wash then place egg covered fish into panko/coconut mixture
Coat chunks of fish evenly with panko and coconut
Drop coated fish into hot oil and fry until golden brown
Poor Man’s Lobster
Ingredients
1lb Halibut skinned and cubed
2 litre Bottle 7up
1 tbs Salt
1 stick melted butter (for dipping)
Instructions
Empty Contents of 7up bottle into soup pot and bring to a rolling boil
Drop Halibut chunks into boiling 7up. Cook until chunks float then remove
Sprinkle Cooked Halibut with Salt
Serve with Butter for dipping
Halibut Salad
Ingredients
1lb Cooked Halibut flaked
3/4 Cup Mayo
1/4 Cup stone ground mustard
1/2 cup sweet pickles chopped
1/2 apple chopped
1/2 cup purple cabbage chopped
2 tsp red pepper flakes
salt/pepper
(optional grapes/carrots/hicama/jalapenos)
Instructions
Flake Cooked halibut using a fork
Add mayo, mustard, red pepper stirring with a fork until mixture is smooth and well blended
add pickles, apples, purple cabbage and mix together
dust with salt and pepper
serve with crackers, toast or cut veggies
